      Don’t mind all the idiots Sammy. I cooked this today. I hung the chicken in my Barrel House Cooker. I followed your recipe to the tee. All I did different was I put a smoke tube with cherry wood pellets in the smoker. It turned out fantastic. I have cooked a lot of your recipes. But this one was the bomb. Thank you so very much. My Son is coming home for the first time since Air Force boot camp. I’m going to make this for him. I know he will love it.

    Sam, I love your channel (and books). You mentioned that both the briquets and lump charcoal are better than gas (and I of course agree), but I think that lump is far superior to briquets in both the flavor and ash departed (briquets leave a lot more ash). Also, I think most kamados are designed for lump charcoal. I own a Blaze kamado (with rotisserie) and can't wait to try this recipe. I love the laid back attitude this channel has and the food is great.

      BTW, the Blaze does have a rotisserie just like the Caliber. I almost bought the Caliber, but decided on the Blaze last minute (no regrets).

                    Make life much easier! By just spatch-cocking the bird, use scissors to remove the entire spine. Spread open skin-side up, push down on top of breast till bone cracks so it lays flat, hook wings like normal(or dont, i rather like extra almost burnt wing tips. Versus sorta soagy when you hook em). This way no need for any contraption at all, cooks faster, seasons better, and for a grill you can literally lay this right on the heat... Like literally... Lay it right on the heat, let it go for 45-ish mins and baste how you wish. Easy peasy. You get away with this since the entire bottom side is bones, it doesn't matter if it burns, the meat wont be. So many plus sides to doing a whole chicken like this, to about none compared to a rotisserie. Even in the oven, you don't even need a rack, since the bones are on the bottom, all it does is bastes itself more for you, without buying a one off contraption. Then you can oven it at 425f, since it will cook more even unlike a whole bird. 45ish mins in oven, 2.5-3.5lb bird.

                                                              Great looking chicken, love the Asian style twist. And I can confirm that this is totally doable in an oven without a rotisserie-device.
                                                              Won't beat charcoal grilled, but still good.

                                                                                  HAHA chicken looks to die for and I won't call you any ignorant names, but I rigged up tying chickens best way I could like you just did forever and somethings they would stay together, couldn't the knots tight without a 3rd arm etc. Then I watched how chef's do on youtube and it really is worth the time to learn it's easy as heck and the chicken stays trussed perfectly.
